Abnormal

Around Christmas, Blake had a mole removed on his foot.  The pathology results came back abnormal, so it was advised that he had the whole thing removed.  You know, it's just scary to hear that word: abnormal.  Happily for us, it was just a small surgical procedure, a handful of stitches, and we can go on living as normal.  I know, for many others, it's not as easy.

Down-home Mac-n-Cheese/Made-up Italian Chicken Breast

The boxed Mac-n-cheese is just fine in a pinch, but I think I'm completely converted to the Down-home Mac-n-cheese whenever I have more than 15 minutes for a meal.  Easy and delicious.  I served it with a made-up Italian chicken breast recipe and peas on the side.

Down-Home Macaroni and Cheese

1/4 cup (1/2 stick) butter or margarine, divided
1/4 cup  flour
1 cup milk
1/2 lb.  (8 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
2 cups elbow macaroni, cooked, drained
1/2 cup  KRAFT Shredded Cheddar Cheese
6 RITZ Crackers, crushed


HEAT oven to 350°F.
MELT 3 Tbsp. butter in medium saucepan on medium heat. Whisk in flour; cook 2 min., stirring constantly. Gradually stir in milk; cook until mixture boils and thickens, stirring constantly. Add VELVEETA; cook 3 min. or until melted, stirring frequently. Stir in macaroni.
SPOON into 2-qt. casserole sprayed with cooking spray; sprinkle with Cheddar. Melt remaining butter; toss with cracker crumbs. Sprinkle over casserole.
BAKE 20 min. or until heated through.


And, in case you're interested, here's what I did for my Made-up Italian Chicken Breast.  It was sooo tender.  It just fell apart under my fork!

Place chicken breasts on foil
Cover with Italian salad dressing
Wrap up chicken, loosely in foil
Bake at 350 until done {about 50 minutes}.

Scrambled Eggs

As I was making pancakes today, I asked Blake if he wanted some eggs too.  He said {under his breath}, "not your eggs."   The problem for him?  He doesn't like the texture of the scrambled eggs I make because I add milk to them.  He would prefer them with little to no milk.  I like my eggs with milk.

I guess I always thought adding milk was normal.  So, readers, milk in your eggs or no milk?  {poll to the right}.

Foodie

I think Owen is going to be a food lover.  He's just a couple of weeks shy of six months old {where did that time go!?}, so he had his first bites of rice cereal today.  He just went crazy over it.  Isaac even got in on the action.  Looks like it's time for me to start making some baby food!  {Want to get into making your own food?  It's easy!  I like this site best.}

Weekends

You know, Blake and I have both been working so much the past few years, it was really hard to get a weekend away.  So, with the recent change of jobs for me, our weekends are suddenly more free than they have been for a long time.  We decided to take advantage of it by taking a little trip.  It was a welcome weekend with our boys and some very good friends.  I could not have asked for anything better.  Here are some highlights. :)

Crescent Pizza Pockets

Haven't posted a recipe in a little while.  I'm always on the lookout for quick and easy lunches.  We had these the other day.  I don't recall if Blake gave them a husband rating, but he did say, "These are good!"


**I didn't measure out the pizza sauce, cheeses or pepperoni.  I also used turkey pepperoni to make them slightly healthier.

Crescent Pizza Pockets

1 can (8 oz) refrigerated crescent rolls
1/4 cup pizza sauce
3/4 cup shredded mozzarella cheese
1/2 cup sliced pepperoni (24 slices)
1 teaspoon grated Parmesan cheese

  • Heat oven to 375°F. Unroll dough on cookie sheet and separate into 4 rectangles; press each into 6x4-inch rectangle, firmly pressing perforations to seal.
  • Spread 1 tablespoon pizza sauce on half of each rectangle to within 1 inch of edge. Sprinkle each with 3 tablespoons cheese; top with 6 slices pepperoni. Fold dough diagonally over filling; firmly press edges with fork to seal. Sprinkle each triangle with 1/4 teaspoon grated cheese. With fork, prick top of each to allow steam to escape.
  • Bake 13 to 15 minutes or until deep golden brown. Serve warm.

Snow day

The flurries that were in the forecast last weekend turned into 5 inches of snow for us!  We took advantage of having the family time - we made snowballs, a (lame) tiny snowman, snow angels, and just enjoyed our family.  I've been incredibly busy lately, and too often I take my boys for granted, so this was a welcome afternoon.

Eyes

Isaac's eyes pretty much amaze me.  I guess I never thought I'd have a kid with eyes that weren't brown {if you know our families, technically it's possible, I just never thought it would happen since I learned in all of my science classes that Brown is a dominant color.  Blake's eyes are browner than mine!}.

Eight years ago {has it really been that long?!}, at a NYE2003 party, I remember having a conversation with a girl who said that Blake and I would have boring kids.  She said they would probably be cute, but would just have brown hair and brown eyes...and that was boring.  I'd love to run into her now.  She can eat her words! :)

Sit

Remember Isaac's first sit?  They're definitely brothers.  I just can't believe where the time has gone.  I know they say kids grow up fast {it's true!}, but I feel that Owen is growing up faster than Isaac.  The good news for Owen:  There's less of him on the floor for Isaac to step on!

Digging out

We spent a good portion of our morning digging ourselves out of about 12 inches of snow from the massive storm system that covered a good deal of this country.  Our biggest problem, since we already had so much snow, was figuring out where to put it all!  We're so grateful to live in such a great neighborhood too.  We love our neighbor with his snow blower attachment on his lawnmower!
